Special Paye Cholay (DESI TOUCH)

Ingredients:
1. Mutton trotters 6
2. Onion paste 2
3. Lemon 2
4. Green chilies chopped 4
5. Green coriander chopped 1 bunch
6. Chickpeas 1 cup
7. Oil 1 cup
8. Flour fiber ½ cup
9. Red lentil ½ cup
10. Turmeric powder 1 tsp
11. All spice powder 1 tsp
12. Roasted white cumin powder 1 tbsp
13. Red chili powder 1 tbsp
14. Ginger garlic powder 1 tbsp
15. Baking soda ½ tsp
16. Ginger chopped 2 tbsp
17. Paya cholay masala 2 tbsp
18. Salt to taste
19. For trotter:
20. Water 3 glasses
21. Garlic bunch 1
22. Onion 2
23. Whole black pepper 6
24. Whole coriander 1 tsp
25. Aniseed 1 tsp
26. Salt to taste
Cooking Method:
1. First coat the mutton trotters with ½ cup flour fiber and leave for 5 minutes.
2. Then wash it with luke warm water and put it in pan with 4 to 5 glasses of water, 1 tsp whole coriander, 1 tsp aniseed, 6 whole black pepper, 1 garlic bunch, 2 onions and 2 tbsp chopped ginger to boil.
3. When trotters tender, take out the bones and put it on a side and strain the stock. Soak 1 cup chickpeas.
4. Then in fresh water add ½ cup red lentil with chick peas to boil. When it turns soft add ½ tsp baking soda.
5. In a pan heat 1 cup oil fry onion till it turn light brown. Then add 1 tbsp red chili powder, 1 tsp turmeric powder, 1 tsp all spice powder, 1 tbsp ginger garlic paste and salt to taste and suate.
6. Then add trotters with stock and cook till oil separates. Add 1 tbsp roasted cumin powder and simmer on low flame. In the end add 2 lemon juice, ginger, 4 green chilies chopped and 1 bunch green coriander chopped and serve with nan.
